Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 400°F (204°C). Grease a muffin tin or line the cups with paper liners to prevent sticking. Melt the butter in advance so it’s ready to be added to the wet ingredients.
- Mix Dry Ingredients: In a medium-sized bowl, combine the Bisquick and sugar. Stir them together evenly to ensure the sugar is well distributed throughout the dry mix.
- Mix Wet Ingredients: In a separate measuring cup or bowl, whisk together the milk, melted butter, egg, and vanilla extract until fully blended.
- Combine Wet and Dry: Slowly pour the wet ingredients into the dry ingredients bowl. Gently stir just until combined; the batter should be slightly lumpy to keep the muffins tender.
- Coat Blueberries: In a small bowl, toss ¾ cup of the blueberries with 1 tablespoon of Bisquick. This step helps prevent the blueberries from sinking to the bottom of the muffins and keeps them evenly distributed in the batter.
- Incorporate Blueberries into Batter: Fold the coated blueberries carefully into the muffin batter, mixing gently to avoid breaking them.
- Fill Muffin Tins: Spoon the batter into the muffin cups, filling each about halfway. Scatter the remaining uncoated blueberries on top of each muffin. If desired, sprinkle sparkling sugar on top for a crunchy, sweet finish.
- Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from oven and let cool slightly before serving.
