These authentic Birria Tacos feature tender, slow-cooked beef chuck roast braised in a rich and flavorful chile-based sauce, served in crispy tortillas with melted cheese. Ingredients
Meat and Broth
- 3 pounds beef chuck roast (or short ribs)
- 4 cups beef broth (divided)
- 2 bay leaves
- Salt and pepper to taste
Chiles and Sauce
- 3 dried guajillo chiles (seeds removed)
- 2 dried ancho chiles (seeds removed)
- 1 chipotle pepper (from can with adobo sauce)
- 1 Tablespoon adobo sauce
- 4 garlic cloves
- 1 medium white onion (quartered)
- 2 Roma tomatoes (halved)
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon oregano
- ½ teaspoon ground cinnamon
- ¼ cup apple cider vinegar
For Serving
- Corn or flour tortillas
- Shredded mozzarella or Oaxaca cheese
- Chopped cilantro (optional)
- Lime wedges for serving
Instructions
- Toast and Soften Chiles: Toast the dried guajillo and ancho chiles in a dry skillet over medium heat for 1-2 minutes until aromatic. Then soak them in hot water for 10 minutes until softened.
- Prepare the Sauce: In a blender, combine the softened chiles, chipotle pepper, adobo sauce, garlic, onion, tomatoes, cumin, smoked paprika, oregano, cinnamon, apple cider vinegar, and 1 cup of beef broth. Blend until smooth to create the rich birria sauce.
- Season and Assemble: Season the beef chuck roast with salt and pepper. Place it in the slow cooker and pour the sauce over the meat. Add the remaining 3 cups of beef broth, bay leaves, and adjust salt to taste.
- Slow Cook the Beef: Cook on low heat for 8 hours or on high for 6 hours, until the beef is tender and easily shreds with a fork.
- Shred the Beef: Remove about 1 cup of the cooking liquid and set aside. Take the beef out of the slow cooker, shred it finely, and return it to the remaining sauce in the slow cooker to absorb extra flavor.
- Prepare Tacos: Heat a skillet over medium heat. Dip each tortilla into the reserved cooking broth to soak it, then place it on the skillet. Sprinkle shredded cheese on one half, add a generous portion of shredded beef, and fold the tortilla in half. Cook until the tortilla becomes crispy and the cheese melts.
- Serve: Serve the crispy birria tacos with chopped cilantro and lime wedges. Use the remaining broth as a flavorful dipping sauce on the side.
Notes
- For the best flavor, remove the seeds from dried chiles but keep the veins for some heat.
- Use beef chuck roast for tender, flavorful meat that shreds well.
- If you prefer, substitute mozzarella with Oaxaca cheese for a more authentic Mexican taste.
- Leftover birria meat and broth are excellent for making soups or quesadillas the next day.
- The reserved broth served as dipping sauce is called "consommé" and adds great moisture and flavor to the tacos.
