Description

Ingredients

Filling

  • 2 cups shredded Birria beef (leftovers or freshly made)
  • 1 cup shredded mozzarella cheese

Egg Rolls

  • 12 egg roll wrappers
  • 1 egg, beaten (for sealing)

For Frying and Serving

  • Vegetable oil (about 2 inches for frying)
  • 1 cup Birria consommé (for dipping)


Instructions

  1. Prepare the filling: In a bowl, combine the shredded Birria beef, shredded mozzarella cheese, diced onions, and chopped cilantro. Mix thoroughly to ensure even distribution of ingredients.
  2. Assemble the egg rolls: Lay an egg roll wrapper flat on a clean surface with one corner pointing toward you in a diamond shape. Spoon 2-3 tablespoons of the prepared filling near the center of the wrapper. Fold the bottom corner over the filling, then fold the two side corners inward, and roll tightly upwards. Use the beaten egg to brush and seal the top edge to secure the egg roll.
  3. Heat the oil: In a deep skillet or pot, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer to ensure accurate temperature for perfect frying.
