Description

This Best Strawberry Crisp features fresh, juicy strawberries topped with a buttery oat and brown sugar crumble. Baked until bubbly and golden brown, it’s the perfect comforting dessert served warm with vanilla ice cream.

Ingredients

Filling

  • 2 lbs fresh strawberries (halved)
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 1/4 cup all-purpose flour

Topping

  • 1 cup old-fashioned oats
  • 2/3 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon lemon zest
  • 1/2 cup unsalted butter (melted)

Serving

  • Vanilla ice cream, for serving

Instructions

  1. Preheat oven: Preheat your oven to 350°F (175°C) to ensure it's ready when your dish is assembled.
  2. Prepare baking dish: Grease a 9 1/2-inch deep-dish pie plate or a similar-sized baking dish to prevent sticking.
  3. Mix filling: In a large bowl, gently combine the halved strawberries, lemon juice, vanilla extract, granulated sugar, and 1/4 cup flour. Stir just enough to mix and coat the strawberries evenly.
  4. Place filling in dish: Pour the strawberry mixture into the prepared baking dish and spread it out evenly.
  5. Prepare topping: In another large bowl, combine the oats, 2/3 cup flour, brown sugar, granulated sugar, salt, cinnamon, and lemon zest. Drizzle the melted butter over the mixture and stir with a fork until crumbs form and everything is thoroughly combined.
  6. Add topping to filling: Evenly sprinkle the oat topping over the strawberry filling in the baking dish.
  7. Bake: Place the dish in the preheated oven and bake for 30-40 minutes, or until the strawberries are bubbling and juicy and the topping turns a light golden brown.
  8. Serve: Allow the crisp to cool slightly, then serve warm, ideally with a scoop of vanilla ice cream for a delightful contrast.

Notes

  • Make sure to not overmix the strawberry filling to keep the berries intact.
  • The topping should be crumbly but stick together slightly when pressed.
  • You can substitute frozen strawberries if fresh are not available; thaw and drain excess liquid before using.
  • For added texture, consider adding chopped nuts such as pecans or walnuts to the topping.
  • Leftovers can be stored covered in the refrigerator and reheated gently.
