Description

This Best Baked Egg Casserole is a hearty and delicious breakfast dish featuring a combination of crispy bacon, savory breakfast sausage, flavorful peppers and onions, shredded cheddar cheese, and fluffy eggs baked to perfection. Perfect for feeding a crowd, this casserole is easy to prepare ahead and bake for a satisfying morning meal.

Ingredients

Meats

  • 1 pound bacon, cooked and chopped
  • 12 ounces breakfast sausage roll (uncooked, or ground sausage of choice)

Vegetables & Potatoes

  • 28 ounces frozen potatoes with peppers and onions, thawed

Dairy

  • 2 cups shredded cheddar cheese (medium-sharp recommended)
  • 12 large eggs
  • 1/2 cup whole milk

Seasonings

  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon fresh ground black pepper
  • 1 teaspoon garlic powder

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 375°F (190°C). Grease the inside of a 9x13-inch baking pan well using non-stick cooking spray to prevent sticking.
  2. Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spatula until it’s thoroughly browned and cooked through.
  3. Combine Meat and Potatoes: To the prepared baking dish, add the cooked sausage, chopped cooked bacon, thawed frozen potatoes with peppers and onions, and shredded cheddar cheese. Toss everything gently to combine evenly.
  4. Mix Egg Mixture: In a large mixing bowl, whisk together the 12 large eggs, 1/2 cup whole milk, garlic powder, kosher salt, and black pepper until the mixture is smooth and fully combined.
  5. Pour and Bake: Pour the beaten egg mixture evenly over the potato and meat mixture in the baking pan. Place the pan in the oven and bake for 35 to 40 minutes, or until a knife inserted into the center comes out clean, indicating the casserole is fully set and cooked through.

Notes

  • For a leaner version, substitute turkey sausage for breakfast sausage and consider reducing the amount of bacon.
  • You can prepare this casserole the night before and refrigerate it, then bake in the morning, adjusting bake time slightly for a cold start.
  • Adjust seasoning to taste; adding a pinch of smoked paprika or cayenne can add a nice kick.
  • Make sure frozen potatoes are fully thawed before combining for even cooking.
  • Cheddar cheese can be substituted with other melting cheeses like Monterey Jack or mozzarella for variation.
