Description

The Bee's Knees Cocktail is a classic Prohibition-era drink known for its bright, refreshing blend of honey, lemon juice, and London Dry gin. This cocktail balances sweetness and tartness beautifully, making it a perfect pick-me-up or a sophisticated choice for any occasion. Prepared in just minutes, it’s an easy-to-make drink that brings a touch of vintage charm to your home bar.

Ingredients

Honey Syrup

  • 1 ounce honey
  • 1 ounce hot water

Cocktail

  • 2 ounces fresh-squeezed lemon juice (from about 2 medium lemons)
  • 4 ounces London Dry gin (such as Tanqueray or Beefeater)
  • Granulated sugar (for the glass rim, optional)
  • 2 lemon peels (for garnish, optional)

Instructions

  1. Make honey syrup: In a small bowl or measuring cup, whisk together the honey and hot water until the honey is completely dissolved, creating a smooth honey syrup. Set this aside for use in the cocktail.
  2. Combine cocktail ingredients: Fill a cocktail shaker with ice, then add the fresh-squeezed lemon juice, London Dry gin, and the prepared honey syrup. Cover the shaker and shake vigorously for about 30 seconds until the mixture is well-blended and frothy.
  3. Prepare glasses and serve: If desired, dip the rims of two coupe glasses first in a small shallow bowl of water, then into another bowl filled with granulated sugar to coat the edges. Strain the shaken cocktail evenly into the prepared glasses and garnish each with a lemon peel if you like. Serve immediately.

Notes

  • You can adjust the sweetness by varying the amount of honey syrup used.
  • For a stronger lemon flavor, use freshly squeezed lemon juice rather than bottled.
  • Rimming the glass with sugar is optional but adds a nice decorative touch and a slight sweetness on the first sip.
  • Use good quality London Dry gin for the best flavor balance.
  • Shake the cocktail vigorously to create a light frothy texture and fully blend the flavors.
