- Prepare the sauce: In a small bowl or measuring cup, combine soy sauce, oyster sauce, mirin, brown sugar, garlic powder, and onion powder. Mix thoroughly until the sugar is dissolved and the sauce is well blended.
- Sauté the vegetables: Heat sesame oil (or olive oil) in a large skillet over medium-high heat. Add the sliced onions and julienned carrots. Sauté for 2 to 3 minutes until they begin to soften and the onions turn translucent.
- Boil water for noodles: While vegetables are cooking, bring a pot of water to a rolling boil to prepare for cooking the udon noodles.
- Cook the beef: Add the thinly sliced beef to the skillet with the vegetables. Cook the beef until it is about 80% done, stirring frequently to ensure even cooking. Then, pour the prepared sauce over the beef and vegetables, stirring well to coat everything evenly, and continue cooking until the beef is fully cooked and the sauce thickens slightly.
- Cook the udon noodles: In the boiling water, cook the udon noodles according to the package instructions, typically about 1 minute for fresh or frozen noodles. Once cooked, drain the noodles thoroughly.
- Combine and serve: Add the drained noodles to the skillet with the beef and vegetable mixture. Toss everything together until the noodles are well coated with the sauce and heated through. Optionally, garnish with sliced scallions before serving.
