Sauce

  • ⅓ cup tamari soy sauce
  • 2 teaspoons gochujang

  • 3 tablespoons honey
  • 2 tablespoons sesame oil
  • ⅓ cup water

Instructions

  1. Prepare the noodles: Cook the rice noodles according to the package instructions until al dente. After draining, rinse them under cold water to stop cooking and prevent sticking. Set aside.
  2. Make the sauce: In a small cup or bowl, combine the tamari soy sauce, gochujang, gluten-free oyster sauce, honey, sesame oil, and water. Mix well and set the sauce aside.
  3. Sauté garlic and carrot: Heat 2 tablespoons of olive oil in a large pan over medium heat. Add the minced garlic and julienned carrot, cooking until fragrant and slightly softened, about 2-3 minutes.
  4. Cook the beef: Add the thinly sliced beef to the pan and cook until it just starts to brown. Pour about 5 tablespoons of the prepared sauce over the beef, tossing to combine and cook the meat thoroughly.
  5. Add mushrooms and chives: Incorporate the sliced shiitake mushrooms and chopped Chinese chives into the pan. Stir-fry everything together for about 1 minute so the vegetables soften slightly but remain crisp.
  6. Toss noodles with sauce: Add the cooked rice noodles to the pan and pour in the remaining sauce mixture. Gently toss all ingredients together using chopsticks or tongs to evenly coat the noodles without breaking them.
  7. Garnish and serve: Optionally, sprinkle toasted white sesame seeds and chili threads over the top for added texture and heat. Serve immediately while hot.
