Chipotle Sauce
- 3 chipotle chiles in adobo sauce
- 1 tablespoon adobo sauce (optional for extra spice)
- ½ cup beef broth
- ¼ cup lime juice (freshly squeezed)
- 2 tablespoons apple cider vinegar
- 1 tablespoon molasses (or brown sugar)
- 5 cloves garlic (finely minced)
- 1 tablespoon cumin
- 2 teaspoons dried oregano
- ½ teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Beef and Cooking
- 3-4 pounds chuck roast (fat trimmed and cut into large chunks)
- 2 tablespoons oil (divided)
- ¾ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup white onion (finely chopped)
- 4 ounces canned diced green chiles
- 2 bay leaves
- ¼ cup beef broth
For Serving
- Corn or flour tortillas (toasted)
- Cilantro (chopped)
- Red onion (thinly sliced)
- Cotija cheese (crumbled)
- Avocado slices (optional, as per serving suggestion)
- Queso fresco (optional, as per serving suggestion)
Instructions
- Sear the beef: Add 1 tablespoon oil to a Dutch oven or heavy pot over medium-high heat. Season large chunks of chuck roast with ¾ teaspoon salt and ¼ teaspoon black pepper. Sear the beef pieces on all sides for 4-5 minutes until nicely browned, working in batches if necessary to keep a single layer. Remove the beef and set aside.
- Sauté and deglaze: Add the remaining 1 tablespoon oil to the same pot and sauté finely chopped white onion for 2-3 minutes until tender. Pour in ¼ cup beef broth to deglaze the pot, scraping up any browned bits stuck to the bottom. Transfer this cooking liquid to the Instant Pot or slow cooker basin.
- Make the chipotle sauce: Combine chipotle chiles in adobo, adobo sauce if using, ½ cup beef broth, lime juice, apple cider vinegar, molasses, minced garlic, cumin, oregano, paprika, salt, and black pepper in a high-speed blender. Blend for about 30 seconds until the sauce is smooth and well blended.
- Add sauce and ingredients: Pour the blended chipotle sauce into the cooking appliance (Instant Pot or slow cooker) along with the sautéed onions, diced green chiles, bay leaves, and beef broth from the pot. Submerge the seared beef chunks fully in the sauce, then cover with the bay leaves on top.
- Cook the beef: For Instant Pot: Seal the lid, set pressure release valve to sealed, and pressure cook on high for 60 minutes. Quick release pressure as soon as cooking time ends. For slow cooker: Cover and cook on low for 6-8 hours, until the beef is tender and easily shreds.
- Shred the beef: Remove the bay leaves carefully. Using two forks, shred the beef directly in the pot, mixing well so the shredded meat is coated thoroughly in the chipotle sauce.
- Reduce the sauce (optional Instant Pot step): If using the Instant Pot and you prefer thicker sauce, set it to sauté mode and cook for an additional 4-5 minutes to cook off excess liquid until sauce reaches desired consistency.
- Serve the tacos: Warm toasted corn or flour tortillas. Fill each with generous portions of shredded barbacoa. Top with chopped cilantro, thinly sliced red onion, crumbled cotija cheese, and optional avocado or queso fresco. Enjoy immediately!
