Ingredients

Vegetables

  • 1 cup grated zucchini
  • 3 frozen spinach nuggets, thawed (about 1/4 cup finely chopped cooked spinach)

Wet Ingredients

  • 3 large eggs
  • 2 teaspoons olive oil

Dry Ingredients & Seasonings

  • 1 tablespoon whole-wheat flour or oat flour (or gluten-free flour as substitute)
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt

Cheese

  • 1/2 cup grated cheddar cheese


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch square baking dish with parchment paper for easy removal of the frittata after baking.
  2. Sauté Vegetables: Heat 2 teaspoons of olive oil in a frying pan over medium heat. Add the grated zucchini and thawed chopped spinach. Lightly fry for about 3-4 minutes until the vegetables soften, being careful not to overcook.
  3. Mix Ingredients: In a mixing bowl, combine the 3 large eggs, grated cheddar cheese, flour, onion powder, and salt. Stir well to blend. Then fold in the cooked zucchini and spinach mixture until all ingredients are evenly combined.
  4. Bake the Frittata: Pour the combined mixture into the prepared baking dish, spreading it evenly. Place it in the preheated oven and bake for 15-20 minutes or until the egg is fully set and solidified.
