Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (180°C) and lightly grease a 9x9-inch baking pan with spray oil to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, combine the oats, baking powder, cinnamon, salt, and chopped pecans. Toss thoroughly to evenly distribute all dry ingredients.
- Combine Wet Ingredients: In a separate bowl, whisk together the eggs, milk, maple syrup, and vanilla extract until smooth. Pour this wet mixture over the dry ingredients and add the melted butter as well.
- Add Berries and Mix: Gently fold in most of the frozen berries, reserving some to sprinkle on top. Mix everything together carefully until the mixture is well combined but not overly stirred.
- Transfer and Top: Spread the oatmeal mixture evenly into the prepared baking pan. Scatter the reserved berries on top for a colorful finish. Optionally, sprinkle the brown sugar over the top for added sweetness and a slight caramelized crust.
- Bake: Place the pan in the oven and bake uncovered for 40 to 45 minutes or until the oatmeal is golden brown around the edges and set in the center.
