Ingredients
Sandwich Ingredients
- 4 large croissants
- 4 pieces cooked breakfast sausage
- 4 slices Colby Jack cheese
- 1 cup fresh spinach
Egg Mixture
- 6 large eggs
- 3 tablespoons milk
- ½ teaspoon salt
- ½ teaspoon pepper
Other
- 1 tablespoon everything bagel seasoning
- 2 tablespoons unsalted butter
Instructions
- Preheat Oven: Preheat the oven to 350°F (180°C) and lightly grease a baking dish with nonstick spray to prevent sticking.
- Prepare Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper until the mixture is smooth and well combined.
- Cook Scrambled Eggs: Heat 1 tablespoon of butter in a skillet over medium-high heat. Add the egg mixture and cook, stirring occasionally, until the eggs are scrambled and fully set but still moist.
- Assemble Croissants: Slice the croissants in half horizontally and place the bottom halves evenly in the prepared baking dish.
- Layer Ingredients: On each croissant bottom, layer fresh spinach, scrambled eggs, a cooked sausage patty, and a slice of Colby Jack cheese. Top each with the other croissant halves.
- Butter and Season: Melt the remaining 1 tablespoon of butter in the microwave and brush it evenly over the tops of the croissants. Sprinkle the everything bagel seasoning on top for extra flavor.
- Bake Sandwiches: Bake the assembled sandwiches in the preheated oven for 10 minutes, or until the croissants are golden brown and the cheese is melted completely.
- Serve: Remove from the oven and serve the sandwiches warm for a delicious breakfast treat.
Notes
- You can swap out breakfast sausage for bacon or ham if preferred.
- Feel free to use other types of cheese such as cheddar or Swiss for a different flavor profile.
- To make ahead, assemble the sandwiches but bake just before serving.
- Leftover sandwiches can be wrapped and reheated in a toaster oven for a quick breakfast.
