Description

Ingredients

Filling

  • 2 teaspoons hot sauce
  • 1/2 teaspoon kosher salt, plus more for sprinkling

Instructions

  2. Prepare the filling: In a medium mixing bowl, combine the refried beans, shredded cheese, sour cream, taco seasoning, hot sauce, and 1/2 teaspoon kosher salt. Mix well until all ingredients are fully incorporated.
  3. Prepare tortillas (flour): If using flour tortillas, warm them briefly in the microwave for a few seconds to make rolling easier. Spoon about 2 tablespoons of the filling onto the lower third of each tortilla, spreading it evenly but keeping it about 1 inch from the edges to prevent filling from oozing out. Roll the tortilla tightly and place it seam side down on the prepared baking sheet. The taquitos can touch each other on the sheet.
  4. Prepare tortillas (corn): For corn tortillas, microwave a few at a time wrapped in slightly damp paper towels for about 20 seconds until pliable. Then fill and roll using the same method as with flour tortillas.
