Potatoes
- 1 kg / 2 lb baby potatoes (about 3 cm / 1.2" round, ideally uniform size)
- 1 tbsp salt (for cooking)
Seasoning & Herbs
- 30 g / 2 tbsp unsalted butter (no need to melt)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh dill, finely chopped
- 1 tbsp fresh chives, finely chopped
- 1 tbsp fresh parsley, finely chopped
Instructions
- Boil potatoes: Place the baby potatoes in a large pot filled with cold tap water, adding 1 tablespoon of salt. Bring the water to a boil over high heat. Once boiling, reduce the heat to medium to allow a gentle simmer, which helps prevent the potato skins from splitting. Cook for 10 to 15 minutes, until a knife can easily pierce through the potatoes without resistance. Alternatively, you can steam the potatoes until tender.
- Steam dry: Drain the cooked potatoes in a colander and leave them to sit for about one minute. This step allows excess moisture to evaporate, ensuring the butter will stick better to the surface of the potatoes.
- Toss with butter: Transfer the drained potatoes to a large mixing bowl. Add the 30 grams of unsalted butter, 1/2 teaspoon of salt, and 1/2 teaspoon of black pepper. Toss the potatoes gently so the butter melts and evenly coats each piece, imparting a smooth and rich flavor.
- Add herbs and serve: Just before serving, stir in the chopped fresh dill, chives, and parsley. Mix well to distribute the herbs evenly throughout the potatoes. Transfer to a serving bowl and enjoy warm for a delicious herb-infused side dish.
