Description

These Avocado Egg Salad Sandwiches combine creamy avocado with finely chopped hard-boiled eggs and a touch of mayonnaise, creating a rich, flavorful filling. Ingredients

Egg Salad Filling

  • 5 large hard-boiled eggs, peeled and quartered
  • 1 large ripe avocado, diced
  • 5 tbsp Kewpie mayonnaise (or regular mayonnaise as a substitute)
  • Salt and pepper, to taste

Additional Ingredients

  • 2 soft-boiled eggs, sliced in half (use 1.5 eggs total for 3 sandwiches)
  • 6 slices shokupan bread (or substitute with other milk breads or similar soft white bread)


Instructions

  1. Prepare Egg Salad Filling: Add the quartered hard-boiled eggs, diced avocado, and mayonnaise into a food processor. Blend until the mixture becomes finely chopped and reaches a paste-like consistency, leaving only small pieces of egg whites to provide texture. Season the mixture with salt and pepper to taste.
  2. Assemble Sandwiches: Remove the crusts from all bread slices. On three of the bread slices, place a half of a soft-boiled egg in the center. Evenly spread the egg salad filling over these slices, ensuring the filling is at the same height and slightly covers the soft-boiled egg halves. Top each open-faced sandwich with one of the remaining bread slices to complete the sandwich.
  3. Serve: Slice each sandwich in half and serve immediately to enjoy the fresh and creamy flavors.

Notes

  • Using Kewpie mayonnaise adds a slight sweetness and richer flavor typical in Japanese recipes, but regular mayonnaise works well too.
