Ingredients

Bagels and Eggs

  • 2 bagels
  • 2 tablespoons salted butter
  • 2 small eggs
  • Pinch of salt and pepper

Avocado Topping

  • 1 ripe avocado
  • 1 teaspoon fresh lime juice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Finishing Touches

  • 4 tablespoons crumbled feta cheese
  • 2 tablespoons chopped coriander (cilantro)

Instructions

  1. Prepare the Bagels: Slice the bagels in half horizontally. Use a knife to carefully enlarge the holes in the top halves of the bagels to about 2 cm (1.78 inches) diameter to fit the eggs.
  2. Butter the Bagels: Spread the cut sides of all bagel halves evenly with the salted butter.
  3. Toast the Bagels in Pan: Heat a large frying pan (skillet) over low to medium heat. Place all the bagel halves, butter side down, in the pan to toast gently.
  4. Cook Eggs in Bagel Holes: Crack one egg into a small bowl, then carefully pour it into the hole of the top half of a bagel. Repeat for the second egg on the other bagel top. Season the eggs lightly with a pinch of salt and pepper.
  5. Cover and Cook Eggs: Cover the pan with a lid or foil and cook for 3-4 minutes, checking occasionally, until the egg whites are set but the yolks remain soft. If the bottom halves brown too much, remove them from the pan early but keep the tops cooking, as the egg whites will protect the bread underneath.
  6. Prepare the Avocado Mixture: Meanwhile, cut open the avocado, remove the stone, and scoop the flesh into a small bowl. Add lime juice, salt, and pepper, then mash the avocado with a fork until creamy but still slightly chunky.
