Ingredients
Dressing
- ½ cup Greek yogurt or mayonnaise
- 2 tbsp apple cider vinegar
- ¼ cup honey
- 1 tsp garlic powder
- 1 tsp kosher salt (plus more to taste)
- ¼ cup sesame oil
- 1 tbsp white or black toasted sesame seeds
Salad
- 2 cups napa cabbage, shredded
- 1 cup radicchio, shredded
- 1 cup carrots, shredded (about 2 medium carrots)
- 2 Fuji apples, peeled, cored, and julienned
- ½ cup cilantro, chopped
Instructions
- Make dressing. In a mixing bowl, combine Greek yogurt, apple cider vinegar, honey, garlic powder, kosher salt, sesame oil, and toasted sesame seeds. Mix well until all ingredients are fully incorporated and the dressing is smooth.
- Prepare vegetables and fruit. In a large mixing bowl, add shredded napa cabbage, shredded radicchio, shredded carrots, julienned Fuji apples, and chopped cilantro. Toss gently to combine the salad ingredients evenly.
- Toss with dressing. Pour the prepared dressing over the vegetable and apple mixture. Using tongs, toss thoroughly to coat all the ingredients evenly with the honey sesame dressing.
- Serve or chill. Transfer the coleslaw to a serving bowl. It can be enjoyed immediately or chilled in the refrigerator for about 30 minutes to let the flavors meld and the salad crisp up before serving.
Notes
- Use Greek yogurt for a tangier, lower-fat dressing or mayonnaise for a richer texture.
- To toast sesame seeds, lightly heat them in a dry skillet over medium heat until fragrant and golden, stirring frequently.
- This salad can be made a few hours ahead but is best served fresh for optimal crunch.
- Adjust the salt and honey levels to balance sweetness and seasoning to your preference.
- Substitute Fuji apples with Granny Smith for a tarter flavor or sweet apples like Honeycrisp if preferred.
