Filling

  • 40 g Sausage Meat
  • 50 g Dried Apricots, chopped
  • 1 tsp Dried Thyme
  • 2 tbsp Breadcrumbs
  • 0.5 tsp Sea Salt
  • 1 tsp Black Pepper
  • 100 g Apricot Jam

Finish

  • 1 Egg, beaten
  • 1 tbsp Black Onion Seeds (optional)


Instructions

  1. Preheat oven: Set your oven to 200°C (180°C fan) or 400°F and line a baking tray with parchment paper to prepare for baking.
  2. Prepare filling: In a bowl, combine the sausage meat with chopped dried apricots, dried thyme, and breadcrumbs. Season with sea salt and black pepper, mixing everything thoroughly to integrate the flavors.
  3. Roll out pastry: Lightly flour a clean surface and roll the puff pastry out to about 3mm thickness. Cut the pastry into two long rectangles for easier handling and assembly.
  4. Add apricot jam: Spread a thin layer of apricot jam evenly across each pastry rectangle, leaving a small margin around the edges free.
  5. Shape sausage logs: Divide the sausage mixture into two equal parts and shape each into a long log that matches the length of the pastry rectangles. Place these logs on top of the apricot jam, centered along each pastry strip.
  6. Seal the rolls: Brush the edges of the pastry with beaten egg to act as glue, then fold the pastry over the sausage logs, pressing the edges firmly to seal. Use a fork to crimp the edges underneath to ensure the rolls stay closed during baking.
  7. Cut into pieces: Slice each long sausage roll into smaller pieces about 4-5 cm in length. Arrange them seam-side down on the prepared baking tray, spacing them to allow room for puffing while baking.
