Ingredients

Apple Mixture

  • 1 medium Granny Smith Apple (or similar)
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 4 tablespoons Water (plus extra if needed)

Truffle Base

  • 120 grams Light cream cheese
  • 150 grams Light digestive biscuits
  • 50 grams Oats
  • 50 grams Icing sugar

Chocolate Coating

  • 360 grams Milkybar White Chocolate (equal to 4 sharing bars)


Instructions

  1. Prepare the Apple: Peel the apple, remove the core, and chop it into tiny chunks. Place the apple in a small saucepan with 4 tablespoons of water, cinnamon, and nutmeg.
  2. Cook the Apple Mixture: Heat over medium, stirring occasionally for about 5 minutes until the apple is soft and breaking down. Add extra water if needed to prevent drying. Transfer to a bowl and cool completely.
  3. Make Biscuit Crumbs: Blitz the digestive biscuits and oats in a food processor or blender until fine crumbs form.
  4. Mix Truffle Base: Combine the cooled apple mixture with biscuit crumbs, cream cheese, and icing sugar in a bowl. Mix with a spatula or wooden spoon until the consistency is slightly sticky but firm. Chill for 15–20 minutes if too soft.
  5. Shape Truffles: Line a baking tray with baking paper. Scoop heaped teaspoons of mixture and roll between palms into smooth balls. Arrange on the tray to make about 24 truffles. Freeze for 30–40 minutes until firm.
  6. Melt White Chocolate: Chop the Milkybar chocolate finely and melt in a microwave-safe bowl using 10–20 second bursts, stirring between each until smooth and glossy, taking care not to burn.
  7. Coat Truffles: Dip each frozen truffle into the melted chocolate, fully submerging it with a fork. Lift out and let excess chocolate drip off. Transfer onto a wire rack over baking paper.
