Description

This Almond Joy Protein Smoothie is a decadent yet nutritious treat that combines the rich flavors of almonds, coconut, and chocolate with a protein boost. Perfect for a quick breakfast or a post-workout snack, this smoothie leverages natural sweetness from dates and creamy coconut milk for a satisfying and wholesome drink that tastes like a dessert.

Ingredients

Main Ingredients

  • ¼ cup almonds
  • 6 dates
  • ¼ cup coconut milk (refrigerated, not canned, e.g., Califa Farms)
  • ½ cup frozen coconut milk (4 ounces, refrigerated, not canned, e.g., Califa Farms)
  • ⅓ cup non-fat plain Greek yogurt
  • 2 tablespoons finely shredded coconut
  • 2 tablespoons collagen powder
  • 1 tablespoon cocoa powder
  • ½ teaspoon coconut extract

Garnish

  • Sliced toasted almonds
  • Toasted coconut

Instructions

  1. Freeze Coconut Milk: Pour 4 ounces of refrigerated coconut milk into an ice cube tray and freeze until solid. This will provide a creamy, chilled texture to the smoothie.
  2. Blend Ingredients: Place the frozen coconut milk cubes, ¼ cup of coconut milk, almonds, dates, Greek yogurt, shredded coconut, collagen powder, cocoa powder, and coconut extract into a blender. Blend on high until the mixture is completely smooth and creamy.
  3. Serve and Garnish: Pour the smoothie into a glass and garnish with sliced toasted almonds and toasted coconut for added texture and flavor.

Notes

  • Use refrigerated coconut milk (such as Califa Farms) rather than canned for a fresher taste and smoother texture.
  • Freezing the coconut milk before blending creates a thick and creamy smoothie without needing ice.
  • To toast almonds and coconut, lightly heat them in a dry skillet over medium heat until golden and fragrant.
  • Collagen powder adds extra protein and supports skin health, but it can be omitted or replaced with another protein powder if preferred.
  • This smoothie is naturally sweetened with dates; adjust the amount according to your desired sweetness.
