Ingredients
Egg Mixture
- 6 large eggs
- 1/4 cup milk (or dairy-free alternative)
- 1/4 cup Parmesan cheese, grated
- 1/4 tsp garlic powder
- 1/4 tsp dried oregano
- Salt and pepper, to taste
Vegetables
- 1/2 cup cherry tomatoes, diced
- 1/2 cup spinach, chopped
- 1/4 cup onion, diced
- 1/4 cup bell peppers, chopped
Finishing
- 1/4 cup shredded mozzarella cheese
- Non-stick cooking spray, for greasing pan
Instructions
- Preheat Air Fryer: Set your air fryer to 350°F (175°C) and preheat for a few minutes to ensure even cooking.
- Mix Eggs and Seasonings: In a mixing bowl, whisk together the eggs, milk, grated Parmesan cheese, garlic powder, dried oregano, salt, and pepper until the mixture is smooth and well combined.
- Add Vegetables: Stir in the diced cherry tomatoes, chopped spinach, diced onion, and chopped bell peppers to the egg mixture, ensuring even distribution of ingredients.
- Prepare Air Fryer-safe Pan: Lightly spray a small, air fryer-safe pan or dish with non-stick cooking spray to prevent sticking.
- Cook Frittata: Pour the egg and vegetable mixture into the prepared pan. Place the pan inside the air fryer basket and cook for 15 to 18 minutes, until the edges are set and the center is almost firm.
- Add Mozzarella Cheese: Sprinkle the shredded mozzarella cheese on top of the frittata during the last 2 minutes of cooking to allow it to melt and brown slightly.
