Ingredients

Bean Layer

  • 1 16-oz can refried beans
  • 3 Tbsp taco seasoning (homemade or 1 oz packet, divided)

Guacamole Layer

  • 2-3 cups guacamole (homemade or storebought)

Sour Cream Layer

  • 2 cups sour cream

Toppings

  • 2 cups shredded Mexican-style cheese (or cheddar cheese)
  • 4 Roma tomatoes, diced (about 2 cups)
  • ½ to 1 cup sliced black olives (2-4 oz, adjust to preference)
  • ½ bunch green onions, finely chopped (about ¼ cup)
  • ½ small bunch cilantro, finely chopped (about ¼ cup)


Instructions

  1. Prepare the Beans: Heat the refried beans in a saucepan over medium heat or in a microwave-safe bowl until warm to soften them, making spreading easier. Stir in half of the taco seasoning thoroughly.
  2. Layer Beans: Spread the seasoned refried beans evenly into the bottom of a 9x13 glass casserole dish to form the first layer.
  3. Add Guacamole: Spread 2 to 3 cups of guacamole evenly over the beans layer, creating the second layer of the dip.
  4. Mix Sour Cream and Seasoning: In a small bowl, combine the sour cream with the remaining half of the taco seasoning and mix well for added flavor.
  5. Spread Sour Cream: Carefully spread the seasoned sour cream over the guacamole layer, ensuring an even layer.
  6. Add Toppings: Sprinkle the shredded Mexican-style cheese evenly over the sour cream. Then evenly distribute the diced Roma tomatoes, sliced black olives, finely chopped green onions, and cilantro on top.
