Description

This vibrant and layered 7-Layer Dip combines refried beans, guacamole, seasoned sour cream, cheese, and fresh toppings to create the perfect party appetizer. Ready in just 10 minutes, it's a colorful, flavorful dip that pairs perfectly with tortilla chips for any gathering or casual snack.

Ingredients

Beans Layer

  • 1 16-oz can refried beans
  • 3 Tbsp taco seasoning (homemade or 1 oz packet, divided)

Guacamole Layer

  • 2-3 cups guacamole (homemade or storebought)

Sour Cream Layer

  • 2 cups sour cream

Toppings

  • 2 cups shredded Mexican-style cheese (or cheddar cheese)
  • 4 Roma tomatoes, diced (about 2 cups)
  • ½ to 1 cup sliced black olives (2-4 oz, adjust to preference)
  • ½ bunch green onions, finely chopped (about ¼ cup)
  • ½ small bunch cilantro, finely chopped (about ¼ cup)

Instructions

  1. Warm and Season Beans: Heat the refried beans in a saucepan over medium heat or microwave in a bowl until warm to soften and make spreading easier. Stir in half of the taco seasoning thoroughly.
  2. Layer Beans: Spread the seasoned refried beans evenly into the bottom of a 9x13-inch glass casserole dish.
  3. Add Guacamole Layer: Carefully spread 2 to 3 cups of guacamole over the beans, creating a smooth, even layer.
  4. Prepare and Add Sour Cream Layer: In a separate small bowl, mix the sour cream with the remaining half of the taco seasoning. Spread this sour cream mixture evenly over the guacamole layer.
  5. Add Cheese and Fresh Toppings: Sprinkle the shredded Mexican-style cheese evenly over the sour cream layer. Top with diced Roma tomatoes, sliced black olives, finely chopped green onions, and cilantro to finish your colorful layers.
  6. Serve: Serve immediately with tortilla chips for dipping or cover and chill briefly before serving if desired for flavors to meld.

Notes

  • Adjust the amount of taco seasoning according to your taste preference or spice tolerance.
  • Use fresh homemade guacamole or a good-quality storebought version for convenience.
  • To make this dip ahead, assemble and refrigerate covered for up to 24 hours. Add fresh toppings just before serving to maintain freshness.
  • Try different cheese varieties if preferred, such as a blend of cheddar, Monterey Jack, or queso fresco for unique flavor.
  • This dip is great for parties, potlucks, or casual get-togethers and pairs perfectly with crunchy tortilla chips.
