- 1 large egg
- 1/2 cup light or golden brown sugar (not packed)

Instructions
- Prep. Preheat your oven to 340°F (171°C) and line a baking sheet with parchment paper. Set it aside for later use.
- Make dough. In a medium bowl, combine the almond butter, egg, and brown sugar. Beat with an electric mixer for 30 to 40 seconds until the ingredients are well incorporated. The dough will be crumbly but moist.
- Roll into balls. Using about 1 tablespoon of dough per cookie, scoop and roll into balls. Place them on the prepared baking sheet, spacing them about one inch apart.
- Press with fork. Pour some white sugar into a small bowl. Dip a fork into the sugar, then gently press each dough ball down to flatten it and create a classic crisscross pattern.
- Bake. Bake in the preheated oven for 14 to 18 minutes, until the cookies develop a deep golden color. Be careful to avoid overbaking, which can cause excessive browning on the bottoms.
- Cool. Remove the baking sheet from the oven and transfer it onto a wire rack to cool completely. The cookies will be soft when hot but will crisp up and firm as they cool.
