Description

This quick and flavorful 15-Minute Lo Mein Chicken recipe combines tender marinated chicken, fresh noodles, and crisp mixed vegetables tossed in a savory soy and oyster sauce. Perfect for a satisfying weeknight dinner, it features an easy stir-fry method that delivers restaurant-quality taste in just half an hour.

Ingredients

Chicken Marinade

  • 1 pound boneless, skinless chicken thighs or breasts, sliced thin
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 1 teaspoon sesame oil

Sauce

  • 3 tablespoons soy sauce (low-sodium preferred)
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon sugar
  • 1 teaspoon cornstarch
  • 2 cloves garlic, minced

Main Ingredients

  • 12 oz fresh lo mein noodles (or 8 oz dried noodles)
  • 2 tablespoons vegetable oil, divided
  • 1 medium onion, sliced
  • 2 cups mixed vegetables (carrots, bell peppers, snap peas)
  • 3 green onions, chopped
  • Salt and pepper, to taste

Instructions

  1. Marinate Chicken: In a bowl, combine the sliced chicken thighs or breasts with 2 tablespoons soy sauce, 1 tablespoon cornstarch, and 1 teaspoon sesame oil. Mix well and let it marinate briefly to absorb the flavors.
  2. Prepare Sauce: In a small bowl, whisk together 3 tablespoons soy sauce, 2 tablespoons oyster sauce, 1 tablespoon sesame oil, 1 teaspoon sugar, 1 teaspoon cornstarch, and minced garlic. Set aside to allow the cornstarch to dissolve completely.
  3. Cook Noodles: Prepare the lo mein noodles according to the package instructions. Drain and set aside to prevent sticking.
  4. Cook Chicken: Heat 1 tablespoon of vegetable oil in a wok or large skillet over medium-high heat. Add the marinated chicken and cook until golden brown and cooked through, about 4-5 minutes. Remove chicken from the pan and set aside.
  5. Stir-Fry Vegetables: In the same pan, add the remaining 1 tablespoon vegetable oil. Stir-fry the sliced onion and mixed vegetables (carrots, bell peppers, snap peas) until tender-crisp, about 3-4 minutes.
  6. Combine and Toss: Return the cooked chicken to the pan with the vegetables. Add the cooked noodles and pour the prepared sauce over everything. Toss thoroughly to coat and heat through for an additional 2-3 minutes.
  7. Garnish and Serve: Remove from heat, garnish with chopped green onions, season with salt and pepper to taste, and serve hot.

Notes

  • Use low-sodium soy sauce to control saltiness in the dish.
  • Fresh lo mein noodles provide the best texture but dried noodles can also be used.
  • Feel free to swap the mixed vegetables with your favorites or seasonal produce.
  • For extra heat, add a pinch of crushed red pepper flakes or a dash of chili oil when stir-frying.
  • Marinate the chicken for at least 10 minutes if time allows for more tender and flavorful meat.
